Today I’m sharing one of my favorite meals.
1-2 cups organic mango cubed (frozen or fresh)
Juice of 1-2 organic limes
1 cup chopped organic cilantro
2 chopped medium organic tomatoes
½ chopped medium onion
1 chopped organic green onion
1 minced jalapeño
1/2 tsp fajita seasoning
Once everything is chopped and squeezed mix well in a large bowl. Mango Salsa is ready, store in fridge, or set to the side—now time to make the shrimp.
1lb fresh shrimp
4 Tbs lime juice
1-2 Tbs fajita seasoning
½ tsp kosher salt
1 tsp chili powder
Olive Oil or Sunflower oil
In a heated grill pan, with a little bit of oil add your shrimp. Season with fajita seasoning, salt, and chili powder—and squeeze lime over the shrimp. Once the shrimp have cooked for about 3-4 min. they are ready. Make sure not to over crowd the pan*
Now warm up your flour tortillas and place shrimp and salsa inside–enjoy!
Or if you’re going Paleo like me, ditch the tortillas and use bib lettuce for your taco shell or stick the mix in an avocado shell chunking up the avocado and mixing together 🙂
I also wanted to share my daughter’s favorite @TeaCollection has a giveaway going on right now, go check it out! Good luck!
