Hey It’s Okay!

I’m joining Hey, It’s Okay Tuesday on a TUESDAY!! Amber of Airing My Laundry has a weekly linkup to share what you’re okay with.  I highly recommend you join, it’s fun. I feel like I’m in confessional. Although, I’ve never been in a confessional; my blog is one big confessional. I mean you’re not seeing me when I’m professing some pretty profound shhtuff here. Okay, not that deep and profound. Well, there was this post, and this post, or this post, oh wait, what about this post. But then again, I’ve created squishy play dough, chilaquiles, BACON CHOCOLATE, which reminds me I have something I’m okay with! I’ll share that below.

Hey, It’s Okay

… that my family and I have cut down on the bacon, actually we’re cutting down on our meat consumption. I’m not sure how my (Mexican) grandma would feel about this, but I made vegetarian tacos again last night- it was a hit, again! We do not use fake meat, you know, the soy stuff. No. I use vegetables: cauliflower, peppers, onions, and your standard taco toppings. 🙂

… that I’m not sure if I could ever give up a burger. Okay, that’s dramatic, I have given up burgers in the past.

… that during an intense conversation with my husband about happiness, life, and death I started quoting The Office. My love for The Office is real (see here and here).

… that I’m not sure if I’m okay with this year zooming by. Umm.. Happy March! However, I am ready for some sunshine. 🙂

… that I got emotional watching the first episode of Fuller House. I know it’s cheesy, but eh the kids and I can enjoy a show together.

… that I cannot wait for Friday! 1) Because Fridays are my favorite. 2) HOUSE OF CARDS!!! 3) Thank You Notes  4) It’s the freakin’ weekend.

 

… that I’m not on Snapchat. I’m just not sure I need it with all my other 105 social media accounts. Also, just a question, if you’re on Snapchat aren’t your snaps (?) suppose to disappear? If that’s the case, uh oh they’re showing up on Instagram!

  1. You are braver than I! We are meat eaters and if I tried to take meat away, I think there would be a mutiny! The first episode of Fuller House was nostalgic, but I’m still unsure about the rest of the episodes. We have only watched 2.

    1. Remember I was Miss Paleo 2015 😀 Okay, not really, because CARBS! However the paleo diet does consist of a lot of meat, but there are also plenty of veggies. We probably will not cut out meat completely but we’ll try to limit it. All things in moderation? We’ll see. 🙂
      We have a sign in our kitchen that reads: Bacon (noun) The main reason you are not a vegetarian. 😀 I purchased it for my husband a few years ago, he loves his bacon, but he has been doing alright without it… so far. 😀

      No, I do not boil the vegetables.
      Here’s what I do:
      Pulse cauliflower in food processor (I use a Ninja, I love it) into small chunks.
      Saute’ in pan with olive oil and seasonings.
      I use: chili powder, cumin, Adobo, Mexican asada seasoning or you could use a taco packet. Give the cauliflower a few minutes alone before adding onion and bell peppers. Cook for a few more minutes, you don’t want your cauliflower smushy.
      Add to tortillas or lettuce wraps and garnish!
      It’s fast, easy, and yummy!

  2. I also made vegetarian tacos last night! I made mine with quinoa and think I saw it on SITS a few weeks ago. So easy and so tasty! (Technically the post is turkey tacos, I just left the meat out.)
    I watched the first episode of Fuller House. So cheesy but so worth it!

  3. I am not on Snapchat either and I don’t even really understand what it is and that’s ok. IG is still my favorite 🙂 Kudos on going meat free, I try to eat meat free a couple of times a week. I could never give up meat 100% though!

      I’m lost on Snapchat. I’m on Periscope, but mostly as a viewer.
      Oh we’re not meat-free. We’re just switching to more veggies less meat. We’re going to shoot for 4 or 5 meat-free days.

  4. No Snapchat for me. Or Periscope! I have no idea what they really are.
    As for Fuller House, I totally got emotional!
    As for burgers, YES. I am obsessed with Five Guys. I have the app on my phone and then it’s ready for me when I get there and I don’t have to wait. I only go once or twice a month but I must be really happy when I’m there because they always recognize me.

    1. I’m on Periscope, mainly as an observer. I’m actually listening to a few speakers at the We All Grow Summit. 🙂
      My husband loves Five Guys! If you ever make a trip to Sullivan’s Island in South Carolina you’ll have to try Poe Tavern’s burgers, they’re SO GOOD!!
      Who wouldn’t be happy getting a big juicy burger? 🙂

  5. I’m loving Fuller House too. I keep singing the theme song in my head. My husband and I are ready for more remakes. I totally want a Sister, Sister remake 🙂

    1. It’s cute & cheesy. It’s not riveting television, but it’s something you can watch with the kiddos. 🙂
